TUSCAN EXTRA-VIRGIN OLIVE OIL
This particular offer has been conceived for a group of teachers and chefs of the Swedish School of Hotel Management of Stockholm , who came and visited San Gimignano.It is a special occasion to discover such an important product as Tuscan extra-virgin olive oil and to sweep away all the misleading information about this product which are spread on the market, especially for foreign buyers.


On their arrival, after a short welcoming aperitif and a visit to the farm – if requested – our guests will take part in a workshop where they will be informed about all the regulations concerning this product, the different varieties of olive-trees and their peculiar characteristics, the producing cycle, (growing, picking up, milling) and some suggestions to keep it.
The organoleptic and sensorial characteristics of Tuscan extra-virgin olive oil will be presented through a semi-professional guided tasting of different samples of oil – including a “spoiled” one, and other oils coming from different geographic areas. This will give us the possibility of understanding the peculiarities of Tuscan extra-virgin olive oil – and especially of our own oil - thanks to comparisons as well. We eventually taste some dishes, perfect foil of Tuscan extra-virgin oil, and we will give you suggestions for the best use of this product in cooking and dressing.

• Typical Bruschetta (toasted bread with garlic);
• Spelt salad with fresh tomatoes and basil;
• Spicy Gorgonzola cheese with oil, lemon, parsley;
• Ricotta cheese with Tuscan herbs, served with dried tomatoes in oil;
• Grilled vegetables and vegetables in oil;
• Crostini (sliced bread) with green and black olive paté;
• Legumes (beans and chick-peas) “all’olio bono” dressed with our latest fresh oil;
• A selection of typical Tuscan seasoned meats and pecorino cheese;
• Dessert: in wintertime, castagnaccio, in high season cantucci and Vinsanto;
• Wine: Vernaccia di San Gimignano D.O.C.G. classic version, Chianti Colli senesi D.O.C.G. and Vinsanto.
All these wines are produced in our farm.
